Hand-forged by Toshiki Nanbu, who has kept the traditions of Echizen alive for 3 generations.
Thinly forged and lightweight blade in rustic hand-forged style with 11 layers of damascus.
The blades are ground ultra-thin, so you will experience a fantastic cutting performance where the knife glides effortlessly through the workpiece.
Please note that as the knife is hand-forged, it is to be expected that dimensions and weight may vary slightly and small "imperfections" may occur. however, you get a unique knife with soul and charm.
The material composition of the steel can be found as a mix between blue and white steel. In addition to the high carbon content, Takefu V special has Cr and W added, which increases the strength and hardness of the steel.
The knife is not stainless, so extra care and attention is expected and it is recommended that the knife is washed and dried directly after use.
The steel will develop a patina over time and the blade will take on a dull and darker appearance.
As with all knives, this one in particular is not dishwasher safe.
The knife can be viewed and tested in the workshop.
